Description
The stipes are the hollow stems of bull kelp. Stipes are crunchy and circular, providing a desirable texture and taste. Bull kelp stipes are extremely popular for making pickles. Stipes can also be blanched and added to soup or stir fry. They serve as a fun, new shape and salty, delicious flavor in many dishes. Since the stipes take up much more space in totes, they will be limited in quantity and therefore, more expensive.
Bull kelp blades are the tasty and tender ‘leaves.’ They can be used very similarly to sugar kelp blades. You can dry the blades, eat them fresh, sauté them, or cut them into bite-sized pieces for soups. Blanch them before making your own seaweed salad.
